Given the choice between electric and gas ranges, I've always chosen to cook with gas. I like its responsiveness -- oops, I'm burning the sauce! -- quick! turn it off! Up until now, that is. I've met my match in the Thermador Induction Cooktop. A teapot full of water comes to a boil super fast; turn the burner off and it shuts down INSTANTANEOUSLY. You can wipe the solid surface clean even while cooking and you won't burn yourself -- only the area directly under each burner is hot. There are bells and whistles in the use book (child lock, power boost, time cooking) I haven't even explored yet, and finding the right (ferromagnetic) pots and pans was a snap. One magnet and the Target cookware department was all it took.
